Three Cheese Macaroni Recipe
May 24, 2008With this dish, we take a classic family favorite and bump it up a notch. Three cheeses are blended to create a mouth watering dish: jack, extra sharp cheddar, and the star of the show…. feta. That’s right, feta! Using the right dosage of this non-traditional cheese (non-traditional for mac & cheese anyway), we can really add a burst of flavor to an otherwise plain dish.

Macaroni and Three Cheeses
Ingredients
- 10 cups of cooked noodles (your choice, I like spirals)
- 2 cups of sliced sharp cheddar cheese
- 1 cup shredded mozzarella cheese
- 1/2 cup of feta cheese in block form (after thinly sliced it should resemble crumbs)
- 1/2 cup butter
- 1 tsp. garlic powder
- 1/4 cup organic half and half
- drizzle of olive oil
- salt and pepper to taste (remember sharp cheddar cheese and feta are both very salty, so go light on added salt)
Directions
- Preheat oven to 350 degrees.
- In a large mixing bowl, mix noodles, sharp cheddar cheese (saving a small portion for later), feta cheese (saving a small portion for later), garlic powder, and drizzle with olive oil.
- Grease the inside of a baking pan with olive oil.
- Slice a few slabs of butter and put on the bottom of baking pan.
- Pour half of the mixture in the pan and sprinkle with mozzarella cheese, and slabs of butter.
- Pour the remaining mixture into the baking dish.
- Layer the remaining slabs of butter onto the macaroni.
- Pour remaining half and half evenly onto the macaroni.
- Use the remaining cheeses to evenly coat the dish.
- Bake for 40 minutes or until cheese had a light golden brown on top.
