Barbecue Vegetable Skewers Recipe

Vegetable skewers are a fun, healthy side dish to spice up your next barbecue. The average barbecue is dominated by meat, meat, and more meat, but you can easily counterbalance that with some vegetable skewers. They are easy to prepare, easier to cook, and less likely to give you heartburn. Even meat-lovers will think these are tasty after you slather on the marinade.

Barbecue veggie skewers

Ingredients

  • Skewers
  • Mushrooms
  • Bell peppers
  • Small Roma tomatoes
  • Pearl Onions*
  • Red Peppers
  • Zucchini
  • Olive oil
  • Black pepper and garlic powder to taste

*Even if you are not an onion lover, you MUST try the pearl onions. They are delicious! They have a sweet taste – not as strong flavored as typical onions.

Directions

  1. If using wood skewers, soak them in water for at least 10 minutes before use
  2. Prepare marinade by adding black pepper and garlic powder to 2 tablespoons of olive oil
  3. Chop veggies and place on the skewers, leaving an inch on each side
  4. Brush on marinade before grilling
  5. Place on sides of grill to cook
  6. Grill for 5 minutes, turning them once and brushing on more marinade
