Tomato-Basil Bruschetta Recipe
August 15, 2008Perfect for a light meal or snack, this fancy looking treat is absolutely delicious! I enjoyed these little bites while vacationing in Italy and I was intrigued by their simplicity. They require minimal ingredients but pack a burst of unexpected flavor. I’m sure you’ll find this easy, fun, and tasty. Bruschetta also makes a great appetizer if you’re hosting a dinner party.

Tomato Basil Bruschetta
Ingredients
- French baguette
- fresh organic basil
- sliced organic Roma tomatoes, 1/2 inch thickness
- 4 ounces of fresh mozzarella sliced into 1/2 inch rounds
- olive oil for drizzling
- fresh cracked pepper to taste
Directions
- Slice baguette into one inch slices
- Drizzle tsp. of olive oil on each baguette slice
- Layer one of each: mozzarella, tomato, and basil leaf
- Lightly crack pepper on top
Optionally you can use skewer sticks or toothpicks, as I did in the above picture, to hold the ingredients in place. Enjoy!
