Oatmeal Raisin Cookie Cupcakes

I made these trying to come up with a fun and different kind of cupcake for an after dinner dessert with my best friend Joy. These ended up turning out better then I expected. It is just like a big chewy oatmeal cookie shaped like a cupcake.

Ingredients

  • 1 1/3 cup flour
  • 2/3 cups light brown sugar
  • 1/3 cups raw sugar
  • 1 egg
  • 1/8 cups shredded apple
  • 1/4 teaspoon salt
  • 1 teaspoon cinnamon
  • 1 1/2 tablespoon Kahlua
  • 1 tablespoon of vanilla
  • 1 cup shredded sweetened coconut
  • 1 cup oatmeal
  • 1 cup finely chopped walnuts
  • 3/4 cup chopped raisins
  • 1 stick butter
  • 1 teaspoon baking powder

Kahlua Spice Butter Cream Frosting

  • 1 stick of butter
  • 2 cups of powdered sugar
  • 1 1/2 tablespoons Kahlua

*In a mixer, beat all ingredients together on a medium speed for five minutes, should look fluffy.

Directions

  1. Preheat oven to 325 degrees
  2. Using a mixer, mix sugar and butter together for two minutes on a medium speed (should become lighter in color)
  3. Mix in egg and shredded apple, mix until thouroughly blended
  4. Mix in vanilla and Kahlua
  5. Sift in a separate bowl, flour, baking powder, cinnamon, and salt
  6. Fold dry mixture into wet mixture
  7. Fold in oatmeal, raisins, coconut, and walnuts
  8. Fill cupcake pan with liners, then fill with batter 3/4 full
  9. Bake for 30 minutes (when tooth pick comes out clean)
  10. Let cool
  11. Pipe or spread frosting on cupcakes and lightly sprinkle with cinnamon
