Oatmeal Raisin Cookie Cupcakes
I made these trying to come up with a fun and different kind of cupcake for an after dinner dessert with my best friend Joy. These ended up turning out better then I expected. It is just like a big chewy oatmeal cookie shaped like a cupcake.
Ingredients
- 1 1/3 cup flour
- 2/3 cups light brown sugar
- 1/3 cups raw sugar
- 1 egg
- 1/8 cups shredded apple
- 1/4 teaspoon salt
- 1 teaspoon cinnamon
- 1 1/2 tablespoon Kahlua
- 1 tablespoon of vanilla
- 1 cup shredded sweetened coconut
- 1 cup oatmeal
- 1 cup finely chopped walnuts
- 3/4 cup chopped raisins
- 1 stick butter
- 1 teaspoon baking powder
Kahlua Spice Butter Cream Frosting
- 1 stick of butter
- 2 cups of powdered sugar
- 1 1/2 tablespoons Kahlua
*In a mixer, beat all ingredients together on a medium speed for five minutes, should look fluffy.
Directions
- Preheat oven to 325 degrees
- Using a mixer, mix sugar and butter together for two minutes on a medium speed (should become lighter in color)
- Mix in egg and shredded apple, mix until thouroughly blended
- Mix in vanilla and Kahlua
- Sift in a separate bowl, flour, baking powder, cinnamon, and salt
- Fold dry mixture into wet mixture
- Fold in oatmeal, raisins, coconut, and walnuts
- Fill cupcake pan with liners, then fill with batter 3/4 full
- Bake for 30 minutes (when tooth pick comes out clean)
- Let cool
- Pipe or spread frosting on cupcakes and lightly sprinkle with cinnamon

These things are so good!!!!!!!! I could eat these for dessert or breakfast. The textures and flavors are so good. You have to try these. Martha Stewart eat your cookie heart out!
