Sugar and Spice Cookies Recipe

I initially started making these as shortbread cookies, but they weren’t festive enough for the holidays. I wanted to spice these up a bit, so naturally, I added some sugar and spice. That was how these cute little spiced cookies came about. They are great for holiday gifts, or for the office breakroom, and keep for up to 1 month in the freezer.

Ingredients

  • 2 cups of flour
  • 1/2 cup powdered sugar
  • 1 teaspoon pure vanilla extract
  • 1 teaspoon cinnamon
  • 2 sticks butter (room temperature)
  • 1/8 teaspoon salt

For dusting

  • 1 cup powdered sugar
  • 1 teaspoon cinnamon
  • 1 large zip lock bag

Directions

Using a mixer, mix butter and sugar together on high until fluffy (about 5 minutes). Mix in vanilla extract and salt. Gently mix in flour and cinnamon, mix until well incorporated. Lay out a piece of plastic wrap on your countertop, and pour dough onto the center, working dough with your hands until you have formed a large ball. Then wrap completely with plastic wrap and refrigerate for 1 hour, or until firm. Once chilled, preheat oven to 350 degrees. Using your hands, break off pieces of dough and  begin rolling tiny balls about the size of a walnut. Lay them about a half an inch apart from each other, they will pretty much keep there shape. Bake in oven for 12-15 minutes or until lightly golden brown. Let cool completely.

Once cooled, toss cookie balls into zip lock bag filled with 1 cup powdered sugar and teaspoon of cinnamon. Shake vigorously until all cookie balls are evenly coated with spiced powdered sugar.
