Chicken Cordon Bleu
I made this as a special request from Mark, he loves cordon bleu, and I was amazed at how easy it was to prepare. Only 5 minutes of prep time, then 30 minutes in the oven. That’s it. I swear. I think next time I might try to make this with a breaded crust. You can change up the filling, instead of ham and swiss, replace it with fresh herbs, or do what I’m doing next, stuff it with spinach and feta (you’ll see that post soon).

Slice the chicken lengthwise, creating a flap and a larger surface area.

Place a slice of ham and Swiss cheese on top of chicken

Then roll the ham and Swiss together

Next, roll chicken over ham/Swiss roll, fold in sides, just like you would roll a burrito.

Insert toothpick to hold chicken together, place in baking pan, cover with foil, and bake for 30 minutes.
Ingredients
- 2 fresh chicken breasts
- 2 ounces swiss cheese (1 ounce per chicken)
- 2 ounces sliced ham (1 ounce/slice per chicken)
Directions
Preheat oven to 375 degrees. Thinly slice chicken almost half-way, until you create a flap (the bigger the surface area, the easier it will be to roll cordon bleu). Place swiss cheese on top of the ham and roll together. Place ham roll onto the center of the chicken and flap one end over it. Fold in side over ham then finish rolling (similar to a burrito). To help keep in place, insert toothpicks on each end and two at the end of the flap (options #2: use baker’s twine). Place in baking pan and cover with foil. Bake for 30-35 minutes. Once done, remove toothpicks and serve.
