Baby’s First Birthday Cake, AKA “Smash Cake”

Oliver turned one a couple of weeks ago. I wanted a mini-birthday cake that was especially made for him – not too sweet, not too bland, something still flavorful. And if at all possible, healthy. This cake is what I came up with. Best part is it’s good for all ages.

It’s made with quinoa flour and whole-wheat pastry flour, then lightly sweetened with applesauce and pure maple syrup. I didn’t expect Oliver to eat the entire cake, but at least I felt good with what ended up in his mouth.

The frosting was made from whipping cream, lightly sweetened with pure maple syrup, and a touch of evaporated maple sugar that I found at Trader Joe’s.


It made a great smash cake for Oliver:)

Baby’s First Birthday Cake Recipe

Recipe moderately adapted from The Everything Organic Cooking for Baby & Toddler Book

1/2 cup of quinoa flour

1 cup of whole-wheat pastry flour

1/2 cup of organic milk (soy or dairy)

1/4 cup organic applesauce

1/2 cup organic apple juice

1/4 cup olive oil

1/4 cup pure maple syrup

2 1/4 teaspoons baking powder

1/4 teaspoon salt

1 1/2 teaspoon pure vanilla extract

Maple Whipped Cream Frosting

6 ounces of organic whipping cream

1-2 tablespoons pure organic maple syrup or evaporated maple sugar

Preheat oven to 375 degrees Fahrenheit.

Lightly oil a 6″ or 8″ baking pan and set aside. In a medium mixing bowl, mix flours, salt and two teaspoons of baking powder together.

In a separate mixing bowl, mix applesauce and 1/4 teaspoon of baking powder together. Stir in oil, apple juice, vanilla extract, and milk.

Pour wet ingredients into the dry ingredients and stir until combined. Pour cake batter into greased cake pan and bake for 25-30 minutes, or until toothpick comes out clean once inserted.

Let cake cool before frosting.

For the frosting

In a standing mixer, pour in cold whipping cream and beat on medium until it begins to form soft peaks. Add a tablespoon of pure maple syrup, or evaporated maple sugar and beat until stiff peaks form. Add more syrup or sugar to your liking.

Once cake is cooled spread whipped cream over cake and decorate to your heart’s desire.
