There was a time growing up that Muddy Buddies® snacks were always around for Christmas. My aunt made them every year and it’s a flavor that instantly takes me back to my childhood. There came a point, not sure if it’s once all the kids turned into teenagers, that Muddy Buddies® disappeared from holiday functions. Now that I’ve started a family of my own, I brought this classic back to life for my family to enjoy for the holidays.
Muddy Buddies® is Chex® cereal, mixed with a combination of peanut butter and chocolate, which lends irresistible crunch and flavor. I played around with half a batch and made it all peanut butter flavor, replacing the chocolate chips with peanut butter chips. It was delish, just as expected. The idea of using almond butter instead of peanut butter might be a good alternative for those of you with peanut allergies, and I’m sure just as tasty.
9 cups Rice Chex® cereal
1 cup semisweet chocolate chips (Or replace with peanut butter chips)
1/2 cup peanut butter
1/4 cup butter
1/2 teaspoon vanilla extract
1 1/2 cups powdered sugar
*Microwave Method - Place peanut butter, chocolate chips and butter into a large microwave-safe bowl and microwave on high for one minute. Give it a stir and then microwave for another 30 seconds until mixture is nice and smooth. Stir in vanilla extract. Pour in cereal and stir together until evenly coated with peanut butter chocolate mixture.
Pour mixture into 2-1 gallon resealable food bags. Split powdered sugar into two, and pour into each bag. Seal bag and shake it until powdered sugar coats each cereal. Pour mixture onto wax paper and let it cool/harden. Store mix in an airtight container in the refrigerator.
*Stove-top method – Melt peanut butter, chocolate chips and butter in a medium sauce pan on a medium heat until smooth. Stir in vanilla extract and remove from heat. Add chex cereal to a large mixing bowl and pour melted peanut butter chocolate mixture over cereal. Stir until evenly coated and follow same instructions in the second paragraph.
