I’m sure everyone at this point is at the tale-end of Christmas mayhem, with last minute gift shopping, wrapping and baking. Or at least I am. Yesterday I made batches of homemade marshmallows and gingerbread men to box and send off as gifts. Earlier this week, it was batches of this goodness. This one was by far the easiest of the three to make. It’s pretty addictive too, so be careful. I caught myself standing over this nibbling non-stop.
I found it easiest to crush candy canes and Oreo cookies in a large zip-lock bag using a rolling pin or bottom of a heavy jar. The candy canes tend to break through the plastic bag so it’s a good idea to place a cloth over the bag.
Once the candy canes and oreos are crushed, the chocolate melted, it’s pretty straightforward from here. Mix the three together! But leave a fourth of the crushed candy cane behind to sprinkle on top.
Spread bark mixture onto wax paper and sprinkle the top with the remainder crushed candy canes. Allow to harden before breaking into pieces.
This recipe can easily be doubled or tripled.
1-12 ouncebag of vanilla flavored candy melts (I like Wilton's brand)
12 Oreo cookies, crushed
12 peppermint candy canes, finely crushed.
Melt vanilla chips until smooth. Stir in crushed Oreo cookies and 3/4 crushed candy canes. Spread mixture onto wax paper and sprinkle the remaining crushed candy canes over the top of the mixture.
Allow bark to harden completely (about 10-15 minutes). Break bark into chunks.
