Toasted Coconut Haystacks Recipe

I love making all sorts of cookies and candies during the holidays, but this year, I just don’t have all the time and energy it takes to do it. That is why these goodies are perfect. They might seem time-consuming, but you can be done making these in less than 20 minutes. Sounds good to me! If you are a coconut fiend, then you will love these. More importantly, the people you give them to will love them also – ’tis the season of giving! When it comes to ingredients, you don’t have to stop with toasted coconut. I bet these would also be great with toasted pecans, walnuts, or peanuts. Get creative and have fun with them!

Toasted coconut haystacks
Ingredients
- 1 cup of bittersweet chocolate, melted
- 1/2 cups of toasted coconut
Directions for toasting coconut
- Preheat oven to 350 degrees
- spread out 1 1/2 cups of coconut onto a baking sheet
- Bake for 10 minutes
- Mix coconut with a spatula
- Bake for another 3 minutes, should be lightly toasted brown
- Let cool
Directions
- Melt chocolate in a double broiler
- Mix cooled toasted coconut (Save about 2 tablespoons for sprinkling on after) with melted chocolate
- Spoon dollops onto wax paper and let cool
- Sprinkle a little of leftover toasted shavings on top for decoration
