White Chocolate Cupcakes Recipe

As with all great cupcake recipes, the secret is in the frosting. Using my dreamy buttercream frosting, I add a twist of white chocolate making these beauties irresistible. And why not add a little pep to it with some fresh strawberries?

White chocolate cupcakes
Cupcake Ingredients
- White cake mix
- My “Dreamy Buttercream Frosting”
- 10 sliced strawberries and 1 cup blueberries (or your favorite fruit)
- half bag of white chocolate chips
Dreamy Buttercream Frosting
- 2 cups powdered sugar
- 1 cup softened butter
- 1 1/2 tbsp vanilla

Mixing cupcake frosting
Directions
- Bake white cake mix and place in a cupcake baking pan. Let cool.
- Whip frosting ingredients in mixer on medium for 2 minutes.
- Switch gears and whip frosting on high for 3 minutes, until it is rich and creamy.
- Melt half bag of white chocolate chips for 15 seconds in microwave, stir, and if not melted to a honey-like consistency, microwave for another 10 seconds. Just the chips, not the bag itself!
- Add melted white chocolate chips to the frosting mixture and blend well with mixer for about 20 seconds.
- Frost cupcakes and decorate with sliced fruit.
Resist the temptation and try not to eat them all before your guests arrive!
