
The holidays can be stressful and a bit overwhelming, most times. This little drink makes it all go down better. Reminiscent of egg nog, but with a Puerto Rican twist of coconut milk and white rum. It totally rocks my stockings off. Seriously. Treat yourself to this drink tonight. After work, after the shopping crazyiness is over, or better yet, after the kids go to bed. You’ll be glad you did.

One of my best girlfriend’s mother, or as she likes to be referred to as, Oliver’s “Adoptive Grandmother,” turned me onto this drink. I can’t thank you enough, Gayla.

Coquito Recipe – I’ve altered this recipe quite a bit around my taste. I tend to like egg nog that isn’t so thick, so this drink reflects that. I also don’t like my drinks overly sweet either, so this combination is perfect.
Original recipe partly adapted from about.com.
2 cups of coconut milk (I love Silk’s new drinkable coconut milk. It’s light and creamy and can be found in the dairy aisle). If you’re having a hard time finding this then a can of coconut milk will work, it will just be slightly thicker.
1 – 14 ounce can of sweetened condensed milk
1 – 15 ounce can of evaporated milk
1 teaspoon ground cinnamon
1/4 teaspoon ground cloves
1/4 teaspoon nutmeg
1 teaspoon pure vanilla extract
1/2 cup white rum. More if you’re feeling feisty.
Mix all ingredients together and chill for an hour before serving.
