Pumpkin Chocolate Chip Cookies Recipe

Last night was time to clean out the cupboards at Casa de Domestica. I made these cookies trying to use up leftovers in my cupboard and fridge. You might as well call these the “everything but the kitchen sink” cookies. These delicious bites have toasted pecans, chocolate chips, raisins, oatmeal, and even some leftover pumpkin that I had lying around. The result was soft, chewy, and delicious!

Pumpkin chocolate chip cookies

Ingredients

  • 1/2 cup pumpkin puree
  • 1/4 cup maple syrup
  • 5 tablespoons of butter
  • 1 cup brown sugar
  • 1 egg
  • 1 1/2 cup flour
  • 1 cup chocolate chips
  • 1/2 cup raisins
  • 1/2 cup oatmeal
  • 1/2 cup toasted pecans
  • 1 teaspoon vanilla extract
  • 1/4 teaspoon salt
  • 1/2 teaspoon nutmeg
  • 1 teaspoon cinnamon

Directions for toasted pecans

  1. Preheat oven to 350 degrees
  2. Spread 1 cup of raw pecans on a baking sheet and bake for 10 minutes
  3. Once cooled, break them up into pieces (I just use my hands and crush them)

Directions

  1. Preheat oven to 350 degrees
  2. Using a mixer, combine all of your wet ingredients and mix for 1 minute
  3. Sift in dry ingredients and mix until well incorporated
  4. Finally mix in pecans, raisins, oatmeal, and chocolate chips
  5. Spoon onto a lightly greased baking sheet and bake for 12 minutes
  6. Makes about two dozen cookies
