Chewy Butterscotch Walnut Blondies

We had some friends over for a barbecue/swim party last weekend and I was in charge of making dessert, and the main dish. The plan was we’d grill hamburgers and after dinner go for a swim. That idea got dumped on, literally, by mother nature and her timing on a big thunder storm. Instead of swimming and grilling outside, we cooked our burgers on a skillet in the kitchen and once everything was ready, the storm calmed down enough for us all to enjoy our dinner outside on the back porch. Yay! For a day that started off at 100 degrees plus and ended at a cool and breezy 70 degrees after the storm,  who can complain about that? It was the perfect day.

Now for dessert, my head always seems to turn to brownies, probably because they’re quick and easy and when you’re entertaining, that’s what it is all about, right? But I remembered I made brownies last time this group of friends were over, so that wouldn’t do. Then it came to me – why not make blondies?

For a recipe that gets whipped together in minutes, I am one impressed lady because these were to-die-for good. They were everything you would imagine a brownie to be, minus the brownie.  But please, feel free to add chocolate chips to this recipe if that’s your thing. I’ll take them however with butterscotch chips any day. And the walnuts, they just add the perfect crunch and flavor.

Butterscotch Walnut Blondies


1 stick of butter (8 tablespoons), melted

1 cup dark brown sugar, packed

1 egg

1 teaspoon of pure vanilla extract

1/4 teaspoon salt

1 cup all-purpose flour

1/2 teaspoon baking powder

1/3 cup butterscotch chips

1/c cup walnuts, roughly chopped

Preheat oven to 350 degrees Fahrenheit.

Grease an 8x8 baking pan.

Mix together the melted butter and sugar until smooth. Add egg and vanilla extract and mix well. Incorporate flour, baking powder and salt until combined. Fold in butterscotch chips and walnuts.

Pour into baking dish. Spread out evenly.

Bake for 20-25 minutes.
