If you’re looking for something to cool you off AND wake you up, then keep reading. This dessert can be enjoyed anytime, because when you add coffee to something, it’s an anytime kind of thing. Am I right, or what? Scoops of vanilla bean ice cream sitting pretty on top of a puddle of freshly brewed, strong coffee or espresso. And as if things couldn’t get better, a sprinkling of chocolate chips. Pure delight, and only three ingredients.
You can also go sans chocolate chips, either way is good good good. As an afterthought I imagined chocolate ice cream in place of vanilla being killer – mocha latte, anyone? Yes, puh-lease!!!
1/3 cup of strong brewed coffee or espresso
2 scoops of vanilla bean ice cream
1 teaspoon of chocolate chips
Scoop ice cream into a cup, pour coffee on top and sprinkle with chocolate chips
