Margarita Bars

It’s 4th of July week. You know what that means? That means people will be firing up the barbecue and having parties. How about I blow your socks off with a boozy dessert? Even better, this dessert tastes like a margarita – a heaven sent, margarita.

It’s magically delicious. Get on it.

Pulverize a stack of graham crackers until they are a fine crumb and melt some butter.

Mix the two together and press into a 9×13 inch glass Pyrex (or equivalent freezer-safe pan).

Mix some soft vanilla frozen yogurt with some frozen limeade and cool whip together until smooth. Then add a heavy splash of tequila.

Mix it in good.

Poor the boozy goodness evenly over graham crust. Cover and freeze for a few hours until firm. Serve with fresh whip and a lime wedge. Yum.

Margarita Bar Recipe

18 graham crackers, finely crushed (about 2 1/2 cups)

12 ounce can of frozen limeade, thawed

1/2 cup of butter, melted

1 cup of Cool Whip (fat-free or low-fat), thawed

2 quarts (8 cups) low-fat vanilla frozen yogurt, softened

1/4 cup tequila

Pour graham cracker crumbs into a large bowl and drizzle melted butter over it. lightly stir and then pour into a 9×13 baking pan and press onto the bottom.

In a large bowl using a hand-mixer, whip softened frozen yogurt, cool whip, limeade together until smooth. Add tequila and mix until well combined.

Pour mixture into prepared pan and evenly spread out with a rubber spatula. Freeze for 4 hours or until firm.

Serve with freshly whipped whip cream and a lime wedge.
