Vegan Blonde Bars Recipe

I know you’re probably thinking that this will not taste good.  You’re wrong.  Using different ingredients to make this vegan doesn’t mean you sacrifice the flavor.  You will be surprised when you actually try these because they are so yummy.  I came up with this recipe one night when I had my girlfriends over for wine and a movie. I was in a pickle, I thought I had nothing sweet to whip up in the kitchen.  And like myself, my girlfriends have a sweet tooth, but also enjoy trying new and different healthy versions of desserts.  I also knew I wouldn’t freak them out if I threw in some strange ingredients.  As I pondered on what I could make, I thought I had nothing, and almost threw in the towel. Then I came across some tofu, maple syrup, pecans, coconut, oatmeal, and my favorite, dried apricots.  I had something great stirring in my head, I just didn’t know it yet.


Vegan blonde bars


  • 1 cup tofu
  • 1/4 cup oatmeal
  • 1/4 cup maple syrup
  • 1 cup brown sugar or cane sugar
  • 1 cup whole wheat flour
  • 1 teaspoon cinnamon
  • 1/2 teaspoon salt
  • 1 cup vegan vanilla bark, chopped (Vegan white chocolate works also)
  • 1 cup toasted pecans
  • 1/2 cup apricots
  • 1/2 cup shredded coconut
  • 1/4 cup margarine (I used an olive oil based margarine)
  • 1 teaspoon baking powder


  1. Preheat oven to 350 degrees
  2. In a food processor, blend tofu and maple syrup together until creamy
  3. Once creamy, mix with margarine, brown sugar, and vanilla extract
  4. Mix in flour, baking powder, cinnamon, and salt
  5. Fold in vanilla bark, apricots, toasted pecans, and coconut
  6. Pour batter into a 8×8 greased baking pan, spread evenly in pan
  7. Sprinkle oatmeal over batter (optional: decorate top of batter with whole pecans)
  8. Bake for 35-40 minutes or until toothpick comes out clean
  9. Let cool, then serve.  Yields 9-12 bars

    Wow, you’re like the MacGyver of the kitchen. This sounds delicious and adventurous at the same time. Can’t wait to try them!
