I’m in love with this pear salad. As I am a lover of all salads containing fruit. This is a love affair with fresh pear that’s thinly sliced, along with ribbons of red onions, chunks of Gorgonzola cheese and homemade croutons. I’m telling you, salad never tasted so good. With Thanksgiving around the corner, I will happily be eating this salad everyday in preparation for the big feast.
Pear Salad with Homemade Croutons Recipe
1 ripe Bartlett pear, thinly sliced
1 cup fresh baby spinach
2 cups fresh romaine lettuce, roughly chopped
1/2 medium red onion, thinly sliced
1/3 cup crumbled Gorgonzola cheese
For the Sourdough Croutons
2 thick slices of sourdough wheat bread or regular sourdough bread
2 tablespoons butter
1/8 teaspoon garlic powder
2 tablespoons grated Parmesan cheese
For the Dressing
1/3 cup champagne vinaigrette
1/8 cup orange juice
1/3 cup olive oil
A dash of salt
1/4 teaspoon ground pepper
1 teaspoon Dijon mustard
To prepare the croutons, first slather butter onto both sides of sliced bread, followed by a sprinkling of garlic powder and Parmesan cheese. Cut into small cubes and place into a heated skillet with a drizzle of olive oil. Cook over a medium-high heat until nicely toasted and golden brown (stirring occasionally). Spread out onto a plate and set aside to cool.
For the dressing, whisk all ingredients together in a bowl. Set aside.
To assemble the salad, toss greens, sliced pears and onions, and cheese together. Once ready to serve, add croutons and dressing. Toss until dressing is lightly coated. Serve immediately.
