After the big feast, do you ever wonder what to do with all of those leftovers? Sure, you can make leftover turkey sandwiches or turkey soup, but you can also make a hot turkey pot pie, stuffed with everything good from Thanksgiving. Cornbread stuffing (or bread, whichever is your family’s favorite), dried cranberries, carrots, peas and of course, turkey. Like I said, it’s everything good, all topped with a flaky, buttery crust to make it irresistible.
Transform your Thanksgiving dinner into awesomeness the next day.
I’m typically too lazy to fuss with dough from scratch the next day, so I use a pre-made frozen puff pastry dough or pie dough. It’s easy, so why try anything else. But if you do make your own dough, more power to you.
Pre-made pie crust or puff pastry dough
1 1/2 cups of turkey, cut into pieces
2 cups of pre-made stuffing
1/3 cup dried cranberries
1/2 cup carrots, chopped fine
1/2 cup peas
2 cups cream of mushroom soup (or half gravy, half cream of mushroom soup)
1/2 cup turkey broth (Or vegetable broth)
Mix all ingredients together and pour into a pie pan or equivalent size baking pan. Cover top with pie dough or puff pastry dough.
Brush the top of dough with an egg wash of one egg yolk mixed with 2 tablespoons of water. Bake according to instructions on pre-made pie dough/puff pastry dough.
