I love carne asada, especially when it is hot off the grill. These thin strips of steak are perfect for an impromptu barbecue day. Go to your local meat market or butcher and buy some pre-seasoned carne asada. Most shops will have pre-seasoned meat – perfect if you do not have time to make your own seasoning or rub. This is a fast and easy way to wow your friends at your next barbecue. Start by making my fresh pico de gallo, then, slice some sharp cheddar cheese and break out the corn tortillas. Grill the steaks on the outer edges of the barbecue so it can cook slower and stay juicier. You’ll be in carne asada taco heaven in no time. Corn tortillas also cook up beautifully on the grill (also along the outer edges). I like to throw them on for a couple of minutes, flip once, add cheese and let sit for another minute or so, depending how crispy you like it.
