Pico de Gallo Recipe
Pico de gallo is both healthy and refreshing, and probably one of the easiest salsas to prepare. This hot commodity is a medley of tomatoes, onions, cilantro, jalapeƱos, and freshly squeezed lemon juice. Since fresh vegetables are packed with vitamins, this is a great way to add some nutritional value while spicing up your favorite food. I love making this any time of the year, and it is very versatile – you can use it as a dip, on top of chicken or carne asada, in a taco, fajita, burrito, and it is especially delicious with eggs.

Pico de gallo
Ingredients
- 3-4 medium size tomatoes, chopped (I always use Roma tomatoes, just my preference)
- 1 medium white onion, chopped (don’t fight the tears!)
- 1 jalapeƱo, diced
- generous handful of chopped cilantro
- 1 juiced lemon
- salt to taste
Directions
Simply slice and dice all of your fresh veggies, mix together and enjoy!
