Cinnamon Vanilla Quinoa Oatmeal


One of the most important goals I made for 2015 was to have more of a balanced life. That literally means everything – being a better, more present mom to my boys, to my husband, better at time management with maintaining two blogs, and living a healthy lifestyle, so I can keep up with it all. That means more meals made at home, less sugar, less Starbucks (but not less coffee, no no no no, we’ll just be making more of it at home), more plant-based foods in my daily rotation and more family time outdoors. As cliche as it may sound, one of the things that really helps me start the day off right is eating a wholesome, balanced breakfast. It gives me the energy I need to keep the momentum going throughout the day.

This hearty bowl of quinoa oatmeal is simple and the ultimate day starter. It’s vanilla and cinnamon spiced, warm and comforting and a boost of protein from quinoa to keep your belly from rumbling until lunchtime. And did I mention 1 out of 2 of my kids actually ate it and loved it? Mommy for the win!


Cinnamon Vanilla Quinoa Oatmeal


4 cups of water

1/2 cup of quinoa, rinsed well and drained

1 cup steel-cut oats

1/2 teaspoon ground cinnamon

1 teaspoon pure vanilla extract

Pinch of salt

1/2 cup milk (cow, almond, coconut or soy)

Toppings are endless, but here are some of my favorites - fresh blueberries, blackberries,strawberries, bananas, walnuts, pecans, and almonds. For added sweetness I like to chop up a date and sprinkle it in.

Add quinoa, oats and water in a medium sauce pan, stir and bring to a boil. Once boiling, reduce heat to a simmer and stir in cinnamon and pinch of salt. Cook uncovered for 25-30 minutes. When done, stir in milk and vanilla extract. Serve hot with toppings of your choice.
