Apple curry chicken salad

I got this enticing recipe from my mother-in-law, Fran, who got it from a friend in Oregon. The recipe has since been modified. If I had to choose my favorite chicken salad, this would be it – hands down. I love curry, and pairing it with apples, grapes, and chicken is unbelievably delicious. The curry flavor is not as pronounced as one might think. It is just the right amount to bring all the flavors together. It is perfectly great on its own, or prepared as a sandwich or on top of a leafy green salad. Even the non-curry lover would appreciate this chicken salad version.

Ingredients

  • 4-6 chicken breasts, boiled and shredded
  • 3 cups chopped apples
  • 2 cups red grapes (sliced in halves)
  • 1/4 cup finely diced white onion
  • 1 cup veganaise (or mayonnaise)
  • 1/4 cup freshly squeezed lemon juice
  • 1 1/2 teaspoons curry powder
  • 2 hard boiled eggs, chopped
  • pinch of salt
  • *sprinkle of slivered almonds or pecans for crunch

Directions

  1. In a small bowl, combine curry, lemon juice, minced onions, pinch of salt, and veganaise and whisk together
  2. In a large bowl, combine shredded chicken, apples, grapes, and hard boiled eggs
  3. Pour curry sauce on top
  4. Mix well
  5. Top off with slivered almonds or pecans
