It’s been almost two weeks since we’ve been home from our Mediterranean vacation. It was beautiful, stunning, breathtaking, and it was an adventure. We toted along our 21 month old tot and had our reservations about that idea, but went for the gusto and said to hell with it. He ended up being such a great traveling buddy, err…minus a couple meltdowns. If you have a toddler (s) and need tips on traveling lengthy distances, I’m the girl to ask!

Now that we’re back home I’ve found myself craving flavors from the Mediterranean Sea:  capers, lemons, olive oil and sea food! I’ve been lucky enough to work with Bumble Bee® to try out their new Bumble Bee SuperFresh™ Salmon. I’m a salmon lover so this was a no-brainer for me to accept. Each fillet is cleaned, cut and fresh frozen within hours and then chef prepped to ensure a fresh taste. Each fillet comes with a parchment paper pouch to bake in, keeping it moist and full of flavor but also cutting down the cooking time (only 20 minutes in the oven!). It was the perfect meal with minimal preparation after a long travel home. I paired it with kale, quinoa, capers and a light lemon dressing to make a wonderfully fresh tasting Mediterranean summer salad.

Recipe serves 2-4, depending on serving size.

 

Salmon, Quinoa & Kale Salad

Ingredients

8 ounces of Salmon. I used two fillets of Bumble Bee SuperFresh™ Salmon with Garlicky Black Pepper & Extra Virgin Olive Oil

1 cup quinoa, cooked

2 tablespoons capers

Juice from 2 lemons

1 tablespoons Olive oil

1/4 teaspoon dried oregano

3 cups fresh kale, rinsed well with ribs removed

Bake Salmon according to directions.

Chop kale to bite size pieces and place in a large bowl. Add cooked quinoa and capers and toss together.

For the dressing; mix lemon juice, Olive oil and oregano in a mason jar. Seal tight with a lid and shake well.

Serve salad with cooked salmon and a light drizzle of dressing.

    That must have been such a beautiful trip. We eat a lot of salmon, so delicious and healthy.
