Garlic olive hummus
My good friend Lucy is the queen of hummus. Her secret is in the olives. I would have never thought of mixing olives in this recipe but it totally works. Hummus is great as a dip for vegetables, chips, crackers, on top of burgers or sandwiches, and it even goes great on a salad. You can experiment with this recipe by altering some of the main ingredients – maybe try roasting garlic or using green olives instead of black.
Ingredients
- 1/4 cup olive oil
- 2 cups organic garbanzo beans, drained and rinsed
- 3 cloves of garlic
- 1/2 cup organic sliced black olives
- 1/4 cup tahini
- 1 lemon juiced
- Paprika
- Salt and pepper to taste
Directions
- Blend all ingredients in a food processor until creamy and smooth
- Top with a dash of freshly crushed pepper and paprika
