This pomegranate salsa is great on fish, chicken, salads, or even alone by the spoonful. I became an extreme pomegranate lover after creating my beloved Jeweled Brussels Sprouts. Pomegranate quickly became my fruit of choice for cooking. I’m a visual person and I love the color it presents, ruby jeweled pomegranate beads in combo with vibrant green cilantro flecks. Using simple fresh ingredients is the best way to make this refreshing salsa a hit.
- 1 cup pomegranate seeds
- Handful of cilantro, minced
- 1/2 freshly squeezed lime juice
