Roasted Orange Cauliflower Recipe
Roasted cauliflower is delicious. Roasted orange cauliflower is even better. I found some beautiful organic orange cauliflower at the farmer’s market the other day and I was just dying to make something with it. I have had a hankering for roasted cauliflower lately, so I came up with this recipe. The hint of flavor comes from a pinch of cumin and a squeeze of lemon. My friend Alecio said it reminded him of an Indian-style Ghobi dish. I bet this would be yummy with a little cheese on top also. If you can’t find orange cauliflower this would still taste great with regular white cauliflower.
Ingredients
- 1 organic orange cauliflower (cut into florets)
- 3 garlic cloves minced
- Juice from one whole lemon
- Pinch of cumin
- Olive oil
- Sea salt
- Pepper
- Small handful of Italian parsley (Roughly chopped)
Directions
- Preheat oven to 400 degrees
- Spread out florets in a large cake platter lined with foil
- Sprinkle minced garlic over florets
- Sprinkle a pinch of cumin over florets
- Squeeze the juice from one lemon, evenly coating florets
- Generously drizzle olive oil over florets
- Generously sprinkle sea salt over florets (about one teaspoon)
- Sprinkle with pepper
- Bake for 45 minutes or until tender and browned on top
- Top it off with roughly chopped Italian parsley



This was so delicious! I googled ‘orange cauliflower’ and this was one of the first links that came up. I omitted the cumin because I didn’t think it would match the flavors in the rub I used on the pork tenderloin that I served it with, and it was amazing nonetheless. I can’t imagine cooking cauliflower any other way. My husband loved it too – I swear he ate half of it right out of the baking dish before it even made it to the table.
