I’m welcoming November and all of its greatness with a ton of warm and comforting recipes to share with you. Mark and I are hosting Thanksgiving this year with family coming in from out of town, and I am trying out new recipes to add to our menu. To balance out calorie-laden, decadent dishes, I am trying to infuse a good balance of healthier, lighter dishes, like these simple green beans. These green beans really are, simple, with a beautiful crunch and a healthy dose of sautéed garlic.
1/2 pound bag of fresh green beans, trimmed and cut in half
3 garlic cloves, minced fine
Salt and pepper, to taste
Pour a small glug of olive oil in a large skillet over a medium-high heat. Toss in minced garlic and saute until garlic browns a little (about 5 minutes). Add cut green beans and stir, making sure beans get lightly coated with olive oil and garlic. Add a couple of dashes of salt and pepper and cook until green beans are done to your taste. I like a little crunch to my beans so I cook mine for about 8 minutes.
Add more salt or pepper for taste if needed.
