Spicy Soy Bean Salad Recipe

Every once in a while I like to whip up a soy bean salad, just leave the lettuce behind and try out some alternative salad ingredients. This is a great vegan recipe, but you do not have to be vegan to enjoy it! This crisp change on your average green salad is high in protein, fiber, and vitamin C, making it a very healthy dish.

Spicy soy bean salad

Ingredients

  • 1 bag of shelled frozen soy beans
  • 1 cup of shredded carrots
  • 1 green bell pepper diced
  • 3 tablespoons of toasted sesame seed oil
  • a dash of cayenne pepper……careful – a little goes a long HOT way!
  • 1/2 teaspoon of crushed red pepper flakes
  • 1/4 cup diced green onion
  • 1/2 tsp. of garlic powder
  • salt and pepper to taste!

Directions

Boil soy beans in water for 5 minutes, drain and pour into large mixing bowl. Mix all of the ingredients together and let it chill in the refrigerator for an hour so all the flavors can interact with each other.

    **If the spice is too much then half the cayenne and crushed pepper amount

    Enjoy!!

  1. Stir-fried the soybeans with margarine before adding the rest of ingredients and used a red bell pepper instead of green.
