It’s been extra busy on our end lately and I apologize for the infrequent posts. I have some good recipes that I’m getting ready to post here soon. I promise I’ll hit the ground running once this month is over. Our renovation is almost complete and in the process of it all it’s taking every free minute we have. I’m sure the folks at Home Depot know us by name now. If I can get organized, I’ll share some before and after photos of our house project with you all. In the meantime, here’s an easy lunch you can whip up in a short amount of time. Asparagus, a hard boiled egg, and a big squeeze of fresh lemon. So simple. So good.
Simple Asparagus Lunch Recipe – This recipe can easily be doubled, tripled, even quadrupled, to serve more people.

Makes one serving
4-6 spears of asparagus
1 egg (more if you’re making more than one serving)
Fresh cracked pepper
To make a hard boiled egg(s). Carefully place egg in a pot and fill it with room temperature water, just enough to cover the top of the egg. Over a medium heat, bring water to a boil. Once boiling, cook egg for 10 minutes. Remove from heat and let cool. Remove egg and run under cold water and peel shell off.
For the asparagus, bring a medium pan of water to a low boil. Add salt and asparagus to water and allow to boil for about 3 minutes. Remove asparagus and toss in a little olive oil and a big squeeze of lemon juice. Top with sliced egg and some cracked pepper. If you want to get fancy, add some toasted panko crumbs. Amazing!
