Three Cheese Macaroni Recipe

With this dish, we take a classic family favorite and bump it up a notch. Three cheeses are blended to create a mouth watering dish:  jack, extra sharp cheddar, and the star of the show…. feta. That’s right, feta! Using the right dosage of this non-traditional cheese (non-traditional for mac & cheese anyway), we can really add a burst of flavor to an otherwise plain dish.

Macaroni and Three Cheeses

Ingredients

  • 10 cups of cooked noodles (your choice, I like spirals)
  • 2 cups of sliced sharp cheddar cheese
  • 1 cup shredded mozzarella cheese
  • 1/2 cup of feta cheese in block form (after thinly sliced it should resemble crumbs)
  • 1/2 cup butter
  • 1 tsp. garlic powder
  • 1/4 cup organic half and half
  • drizzle of olive oil
  • salt and pepper to taste (remember sharp cheddar cheese and feta are both very salty, so go light on added salt)

Directions

  1. Preheat oven to 350 degrees.
  2. In a large mixing bowl, mix noodles, sharp cheddar cheese (saving a small portion for later), feta cheese (saving a small portion for later), garlic powder, and drizzle with olive oil.
  3. Grease the inside of a baking pan with olive oil.
  4. Slice a few slabs of butter and put on the bottom of baking pan.
  5. Pour half of the mixture in the pan and sprinkle with mozzarella cheese, and slabs of butter.
  6. Pour the remaining mixture into the baking dish.
  7. Layer the remaining slabs of butter onto the macaroni.
  8. Pour remaining half and half evenly onto the macaroni.
  9. Use the remaining cheeses to evenly coat the dish.
  10. Bake for 40 minutes or until cheese had a light golden brown on top.
