Say hello to breakfast again, with this simple 1-2-3 recipe. I wanted to share with you one of my favorite quick and simple breakfasts that I’ve enjoyed almost every day this summer. I also wanted to share this while berries are still in season. This breakfast is what you make of it, literally, by starting with the base – yogurt, then adding your favorite nuts, fruit and berries. It’s the kind of meal that’s healthy, and a quick way to start off your day.
It’s healthy and my goodness, just look at it, it’s even beautiful to look at. You know you have something right when food tastes good AND looks good.
Toasted nuts take this parfait to the next level, and it is something you can do beforehand and store in a sealed container. I keep toasted walnuts, pecans and almonds in my cupboard 24/7 – you never know when you’ll need them.
Berries – all kinds are great, blueberries, raspberries, blackberries, strawberries (note: I like to mix and match different fruits, depending on what is in season, stone fruits like peaches and apricots are great and I love chopped apples in my yogurt, too)
Yogurt (plain Greek yogurt and Activia yogurt are my absolute favorites)
Toasted nuts! (walnuts, almonds, and pecans are my favorite)
Directions – Pre-toast nuts the night before to save on time. Simply pre-heat your oven to 350 degrees Fahrenheit, spread 1 cup of your nuts of choice onto a cookie sheet and bake for 10 minutes. Let nuts cool before mixing in with yogurt.
Mix it all together and enjoy!
